Note that they talk about 5 gallons of oil in the video. That is way too much oil. I always use 3 gallons which is fine. They also use a partially frozen turkey. It should be completely thawed. They also just dunk the turkey in. You should lower it slowly and when the oil froths up bring it out and dunk it in again. After doing this a couple of times the extrem frothing will subside to a normal oil bubble/boil.

So UL is showing all the problems you can encounter. But if you do it right, it can be done safely.
